Pizzettaro's original Italian recipes offer a 100% genuine product with a twist: we work hard to find the synergy between Italian and local Australian ingredients, then finely combined and cook them at 400 degrees in our wood-fired Italian pizza oven. The flavour, the texture, the balance and the high quality of the ingredients we use, make our pizzas the perfect party food and they are simply delicious!

"The Process"
Flour, water, salt and a touch of yeast create our simple, beautiful pizza dough. It provides an amazing pizza crust that’s light and soft on the inside, and nice and crispy on the outside. We let it rest for at least 24 hours in a process known as ‘slow leavening’ (rising or bulk fermentation). The main goal at this stage is to increase the volume of the dough and to allow fermentation: a chemical process where enzymes break down carbohydrates (sugar) into carbon dioxide. Here the dough also matures and reaches the right level of elasticity. The opening and spinning stage of the dough is the last and most exciting moment: with traditional flourishes and special skill the ball of dough is turned into a disc that creates your pizza base and then we top it with ingredients and finally, put it into a very hot woodfire oven!
